Beef

  • Extra virgin olive oil
  • Sliced mushrooms
  • Beef sirloin (sliced into thin slices or thin strips) *Skirt steak could work as well*
  • Snow peas
  • Kale
  • Cooked brown rice (or white rice)

Sauce

  • Soy sauce
  • Brown sugar
  • Rice vinegar
  • Ginger
  • Hoisin sauce
  • Garlic cloves minced

  1. In alarge skilletover medium heat, combine the tablespoon oil and mushrooms. Stir occasionally and cook for 5 minutes.
  2. While mushrooms are cooking, start making the sauce by combining all sauce ingredients in a bowl and whisking until combined.
  3. After the mushrooms have cooked, add beef to the skillet and continue flipping occasionally until beef is browned on both sides.
  4. Add snow peas and kale to skillet, then slowly pour sauce over the whole skillet.
  5. Reduce heat to low and allow sauce to heat up while stirring occasionally for 2 minutes.
  6. Serve over brown rice.

When you are done eating and everything has come to room temperature, place the meat mixture with the sticky sauce into an airtight container, and the fluffy rice in its own airtight container.

  • 2 Tablespoons extra virgin olive oil
  • cups sliced mushrooms
  • 1 pound beef sirloin (sliced into thin strips)
  • 5 ounces snow peas
  • 1 cup kale

    This looks so amazing! Do you think I could do this as a freezer meal? Perhaps freezing with the marinade and add the veggies when serving? Bonus if it could be adapted for slow cooker/ instant pot. Thank you so much for all that you do! My family stays well fed because of you.

    You could adapt part of this recipe to be a freezer meal. You would need to look into some of the ingredients and how well they do freezing. Mushrooms for instance - you can freeze mushrooms fresh, but cook them beforehand for the best texture and flavor. Mushrooms are full of water and when they're frozen from fresh, they can end up soggy and mushy. Cooking them beforehand removes some of that moisture and results in better mushrooms.
