Ingredients of Khandvi Recipe

  • 1 cup besan flour
  • 3/4 cup sour curd
  • 1 tsp ginger and chilli paste
  • 4 teaspoons coconut powder
  • 2 tbsp coriander leaves ( chopped )
  • 1/4 teaspoon turmeric powder
  • 3 cups of buttermilk
  • ½ teaspoon asafetida (hing) seeds
  • A pinch of salt or to taste

For Seasoning

  • 1/4 cup mustard seeds
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • Curry leaves
  • 1 1/2 inch piece ginger
  • 3 green cardamom pods

Instructions for Khandvi Recipe

Soak besan flour in water for at least 30 minutes or until it doubles in size.

This will help the batter stick to the khandvi sticks better.

In a bowl, mix together besan flour, sour curd, ginger, and chili paste well.

Add coconut powder, coriander leaves (chopped), turmeric powder, and asafetida seeds.

Mix everything together well until all ingredients are fully incorporated into the batter. (If you find some lumps in the batter, just smooth it out with your hands)

Add buttermilk to the batter and mix everything together until a smooth consistency is achieved.

Don’t overmix the batter, though, as you want it to be lump-free.

As we will make khandvi rolls, first heat a tablespoon of oil in a Kadai or frying pan over medium-high heat.

Once hot, add mustard seeds and let them crackle for about 30 seconds.

Add curry leaves and ginger to the khandvi batter recipe and mix everything together until smooth.

Stir the batter mixture into the Kadai or frying pan, making sure to spread it evenly.

Now roll khandvi sticks using a roller (or your hands) until they are big enough to fit comfortably in your palm.

Place khandvi rolls on a plate.

Fry mustard seeds, green chilies, and cardamom pods in oil until the spices start to crackle.
